As Kool and the Gang once declared “She’s fresh, fresh, fresh as a summer’s breeze.” We have no idea why Mr Kool and his gang meant decided to describe a highly desirable woman using an adjective one would usually use to discuss high quality vegetables, but whether debating asparagus or attractive members of the opposite sex, there’s one thing Skewd can agree on; fresh is always best.
Skewd’s chefs know this better than anyone; that’s why they don’t mind getting up at five am every single morning to make their daily trips to Billingsgate and Smithfields markets. Every single skewer of meat, leaf of spinach and flake of fish that’s seared in Skewd’s hot coal pit is picup market fresh, every day without fail. And while our chef’s would love us to say the explosive burst of flavour that Skewd dishes produce is entirely down to their cooking skills, the fact of the matter is that fresh daily produce makes a hell of a difference to how our food tastes.
Because daily produce isn’t just superior to frozen goods; it’s a completely different animal (not literally of course, a lamb is still a lamb regardless of whether you froze it and made it taste of cardboard or not). Fresh prawns retain the saltiness of the sea where frozen ones become odorous, fresh salad doesn’t lose it’s crispness where stored veg becomes limp and lifeless, and only fresh meat is able to benefit properly from the 48 hour marination our Head Chef insists upon.
Absolutely all our ingredients are selected according to this golden rule, which ensures Skewd cuisine is bursting with flavour. We could pick up a thesaurus, scroll through it and describe our food with any number of superlatives. But there’s a certain eighties funk band who can put it so much more simply…
